Signature Mooncakes Creations From Yan Ting And Madame Fan

The Mid-Autumn Festival (also the Mooncake Festival or Lantern Festival) is celebrated on the 15th day of the eighth month of the Chinese calendar, the 3,500-year old tradition is commonly observed all over the world to worship the moon, celebrate the harvest season, and most importantly, to eat mooncake!

Yan Tings welcomes the season with four new snow skin mooncakes from an exclusive collaboration with award-winning pâtissier Melissa Chou. Chef Chou lent her culinary expertise and creative input to the creation of this year’s snow skin mooncakes, working closely with Yan Ting’s pastry and dim sum chef Vanness Chai. These resulting mooncakes are an embodiment of harmony and balance,
and a celebration of masterfully combined flavours and textures.

Snow Skin Mooncakes
Making its debut is the Black Sesame Paste with Salted Peanut Truffle Snow Skin Mooncake ($78.00+ per box of 8). Wrapped in a black sesame skin accentuated with hints of gold, this mooncake features a rich and smooth black sesame paste enveloping a luscious salted peanut truffle, offering a tantalising blend of sweet and savoury.

Yet another new creation is the Jasmine Tea Paste with Salted Egg Yolk and Melon Seeds Snow Skin Mooncake ($76.00+ per box of 8). Encased in a white snow skin, this creation is a harmonious mélange of textures and flavours, the mild sweetness of the jasmine tea paste pairing wonderfully with the richness of the salted egg yolk. Melon seeds complete the mooncake, adding a hint of earthiness and a wonderful crunch.

Gourmands seeking a taste of the traditional in snow skin form will also enjoy the Red Date and Wolfberry Paste with Almond Flakes Snow Skin Mooncake ($76.00+ per box of 8). Long known for their wide array of health benefits, red dates and wolfberries have been combined to form a delectable paste that is perfectly complemented by almond flakes, and is wrapped in a blushing pink snow skin.

Another introduction is the Custard with Macadamia Nuts Snow Skin Mooncake ($76.00+ per box of 8), which celebrates custard, a mainstay in both Eastern and Western pastries and desserts. Here, the rich custard paste is married with delightfully subtle macadamia nuts.

Finally, a returning favourite is the Pure ‘Mao Shan Wang’ Durian Snow Skin Mooncake ($118.00+ per box of 8), which features rich luscious chunks of the premium-grade majestic tropical fruit, exuding robust flavours and alluring aromas.

Yan Ting’s gold-hued mooncake signatures like the Baked Mooncake with White Lotus Paste and Single ($79.00+ per box of 4) or Double Yolks ($82.00+ per box of 4) continue to grace this Mid-Autumn Festival.

The highly popular White Lotus Paste with Assorted Nuts and Yunnan Ham Baked Mooncake ($82.00+ per box of 4) will delight epicureans who fancy the delightful textures and a unique balance of sweet and savoury. Meanwhile, the Reduced Sugar White Lotus Paste with Macadamia Nuts Baked Mooncake ($75.00+ per box of 4) is available for those seeking more healthy indulgences. Finally, for gourmands seeking a truly decadent experience, mooncake lovers can also relish in the White Lotus Paste with Four Yolks ($111.00+ per box of 4).

Executive Chinese Chef Mike Tan and his team, unveils time-honored classic traditional baked mooncakes and also delicately crafted snow skin variations created in-house, promising an exciting jumble of creative and contemporary flavours.

Available from 6 August to 24 September 2018, the traditional baked mooncakes include the evergreen classic Lotus Paste Double Yolk mooncake, encompassing two golden egg yolks encased in silky smooth white lotus paste. There is also a Low Sugar Lotus Paste variation available. Those who enjoy the additional crunch will enjoy the delightful contrast in profile and texture of the Baked Five Coarse Grains mooncake. For tea-lovers, the Pu’Er Mooncake, a Madame Fan signature promises to pique your taste buds.

Exhibiting modern authenticity, the new selection of snow skin mooncakes at Madame Fan infuses traditional Chinese techniques with modern concepts to curate unique concoctions – reflective of Madame Fan’s core principals of reimagining Chinese fine- dining.

The decadent range of snow skin mooncakes embodies this ideology with original creations such as Matcha Paste, Creamy Durian Paste and Cempedak (Jackfruit). In the spotlight is Madame Fan’s Signature Champagne Chocolate – encased in a crusty chocolate shell filled with the richness of dark chocolate ganache along with buttery soft champagne snow skin, perfect for those with a penchant for sweets.

Each selection is elegantly presented in a custom-designer crimson red latticed box with an intricate lace pattern that props up as a serving stand on its own. Resembling oriental jewelry boxes, the box comes with a gold crane clasp.
