Yun Nans (云海肴), Unveils A Brand-New, Value-For-Money High-Tea Set Menu

YUN NANS, unveiled a brand-new, value-for-money high-tea set menu. The menu is a celebration of heritage cuisines in China, and the dishes are whipped up using fresh ingredients from the highlands of the Yunnan province. Get to savour a repertoire of traditional dishes. The Yunnan Rice Noodles with Minced Pork 小锅米线(S$9.90) features pork bone soup, minced pork, Yunnan’s chilli sauce, preserved vegetables, fresh chives and al dente ribbons of noodles. The noodles are cooked in individual pots. This dish boasts a slightly sour note that certainly whets the appetite. 

Next, savour the hearty bowl of Traditional Kunming Lor Mee 老昆明卤面(S$9.90), a classic that locals in Kunming regard as having the best aroma, flavour and colour. The spicy dish is made with Yunnan wild coriander for that fragrant lift and preserved vegetables for that crunchy texture as well as bean sauce. The noodles are topped with melt-in-your-mouth braised pork belly with skin intact, deep-fried pork skin and chives. 

A best-selling item since the launch of the YUN NANS outlet in Jewel Changi Airport, the Truffle Rice Noodles in Prawn Broth 虾汤米线(S$13.90) will also be included in the high-tea set menu. Fresh tiger prawns are used to make the prawn broth. Succulent vannamei prawns swim alongside rice noodles in the broth. The recipe also calls for shaved black truffle, and YUN NANS harvests truffles that are found 2,500 to 3,000 metres above sea level.

The indulgence continues with the Fried Rice with Preserved Vegetables 傣家腌菜炒饭(S$12.90), which is a traditional dish by the Dai minority. It has that wonderful wok-hei smoky aroma, with the preserved vegetables delivering a savoury punch. Fresh red bell peppers, picked chillies, slivers of fried poached egg and green chillies contribute strong flavours as well. There is also the Fried Rice with Minced Pork and Preserved Vegetables 黑三剁炒饭(S$12.90)— the Heishan Duo (黑三剁) pairs impeccably with rice. 

Add on just S$3 and get to sweeten the high-tea session with selected desserts or drinks. There is the YUN NANS’s signature Beancurd Pudding with Brown Sugar 黑糖豆花(UP: S$4.90), which with Yunnan brown sugar syrup. Or go with the Traditional Baked Rose Pastry 玫瑰饼(UP: S$5.90), whose filling is made with fresh rose petals. Baked in-house, this dessert boasts a slightly sweet note and floral fragrance. End off with the refreshing and palate-cleansing Lemongrass Pudding 香茅冻(S$4.90).
