Victor Loy has spent years understanding beef at a level most diners never get access to. The Group Executive Chef behind Meadesmoore and Fat Belly is now opening that knowledge up through Butcher’s Secrets, a limited-run workshop series running across May and June at Market Bistro. Culture Cartel is back.
