Coinciding with Indonesia’s Independence Day, Sheraton Towers Singapore has invited Guest Chef John Sawarto to showcase the diverse flavours of Indonesian cuisine from 15 to 21 August 2016 at The Dining Room. Melding premium ingredients with French culinary techniques, Chef John will introduce a repertoire of contemporary Indonesian dishes that also retains the cuisine’s authentic taste.
With the support from the Ministry of Tourism of the Republic of Indonesia and the Embassy of the Republic of Indonesia in Singapore, diners can also look forward to exquisite cultural performances, traditional Indonesian souvenirs as well as attractive lucky draw prizes such as a trip to Indonesia and more.
Indonesian-born Chef John draws on his knowledge of traditional Indonesian spices while working in French cooking finesse as he presents masterfully plated dishes that are irresistible to the eye and palate. The traditional Gado Gado is a potpourri of vegetables with peanut sauce whereas Chef’s adaptation features a grilled Lobster perched on diced tropical fruits and fresh greens.
One of the menu highlights is Indonesia’s most famed curry – Wagyu Beef Cheek Rendang, of which Chef meticulously braises the premium meat in an aromatic blend of rendang spices and coconut cream for six hours.
The Crispy Spiced Duck Confit, which is chef’s interpretation of the popular Balinese crispy duck. As for dessert, the Homemade Chendol Panna Cotta promises a sweet finale with its freshly made mung-bean strands, Okinawa brown sugar and torched ginger sorbet to allay the richness of an Indonesian feast.
Chef John has curated five enticing menus to be served at The Dining Room where its signature cascading waterfalls serves as the perfect backdrop for a modern Indonesian culinary experience.
