At the heart of the celebration is the Crispy Golden Eel and Yellowtail Yu Sheng, artfully crafted in the shape of a snake. This vibrant dish pairs yellowtail and crispy eel skin with passionfruit kumquat dressing and koi fish-shaped mango puddings, symbolizing transformation and prosperity.

Standout dishes include the Smoked Herb-Infused Irish ‘Pipa’ Duck, dry-aged for 168 hours and infused with Chinese and Western spices, and the Double-Boiled Superior Soup with Shark’s Fin in Pig’s Maw, a luxurious broth bursting with aromatic depth. For a decadent twist, the Stir-Fried Australian Lobster with White Asparagus combines lobster with creamy Hokkaido milk, truffle oil, and pine nuts.
