Singapore’s dining landscape ascends to new heights with the launch of The High Tables, a chef collaboration series by HighHouse—the avant-garde day-to-night destination at One Raffles Place. Kicking off this inaugural series is Michelin-starred Chef Daniele Sperindio, whose Italian heritage and innovative culinary philosophy will shape an exclusive menu available from April to June 2025.

Chef Daniele Sperindio, renowned for his eponymous restaurant Art di Daniele Sperindio (awarded a Michelin star within seven months of opening), brings his expertise to HighHouse’s Pan-Asian foundation. The collaboration merges bold Italian flavors with Asian influences, resulting in eight meticulously crafted dishes designed for versatility across casual lunches, after-work indulgences, and celebratory dinners.

- Cacio E Peppe Di Mare Tutte Bucce ($38)
A coastal reinterpretation of the Roman classic, combining pasta with black lime-Parmesan sauce, seared Hokkaido scallops, and Italian furikake. - Panino Al Sugo Frito ($32)
Crispy flatbread topped with fresh burrata, dried Italian Crusco peppers, and a sauce infused with porcini mushrooms, braised Parma ham, and Korean chili. - Summer In Seoul ($22)
Somen noodles paired with aged watermelon slices, geranium leaf broth, and San Marzano tomato jam for a refreshing, umami-rich dish. - From Singapore with Love ($20)
A reimagined take on Ice Kachang, featuring shaved banana nectar ice, compressed Nashi pear, bergamot gems, and burrata cream.
Guests may opt for curated lunch sets (48–48–68) or à la carte selections. Enhance the experience with a Sommelier-Crafted Wine Flight ($68++), featuring pairings such as the citrus-forward Craggy Range Sauvignon Blanc and the sweet-mineral Dr. Loosen Riesling.
