
It begins 33 floors above the city, just as the sky tips into dusk and Marina Bay’s lights begin to shimmer. The scent of malt hangs gently in the air. Not far from the bar’s gleaming copper tanks, two chefs are plating something quietly revolutionary: a five-course tasting menu that doesn’t just taste good—it thinks good too.


On 29 May 2025, LeVeL33, the world’s highest urban microbrewery, and Kaarla Wood-Fire Grill, Singapore’s leading rooftop farm-to-fire concept, are teaming up for a one-night-only four-hands dinner that celebrates sustainability in every bite. It’s a culinary collision of beer brewing, live fire, and farm-forward finesse—fueled by a shared vision of what the future of fine dining should look like.


Two Chefs. One Conscious Kitchen.
The menu is a dialogue between Chef Jake Kowalewski of LeVeL33 and Chef Lamley Chua of Kaarla—two chefs deeply rooted in technique and intent. Chef Jake’s ContemBrewery cuisine folds brewing byproducts like spent grain and yeast into elegant plates, while Chef Lamley brings his signature Asian-Australian lens honed through open-fire cooking and produce plucked from Kaarla’s on-site Food Forest.
This partnership isn’t performative—it’s personal. Both chefs are champions of sustainable sourcing, zero-waste cooking, and building menus around nature’s rhythms.

The Menu: Storytelling in Five Courses
The experience opens with a dual expression of Yellowfin Tuna—Chef Jake’s vibrant tostada layered with wheat beer yuzu ponzu and caviar, and Chef Lamley’s Otoro Zushi crowned with smoked tuna belly and salmon roe. Each bite reflects the chefs’ individual signatures, yet comes together like a conversation between old friends.
From there, diners can expect:
• Shima Aji Crudo cured in kombu with sea urchin and beer ponzu
• Tasmanian Rock Lobster Risotto with barley, farro, and citrus-laced lobster emulsion
• Dry-aged Swordfish in Brut Beer Beurre Blanc with fennel and mustard leaf
• A dessert pairing of Blond Lager Ice Cream with spent grain tempura and Stout-Balsamic Poached Strawberries
Each course is paired with a selection of biodynamic wines and LeVeL33’s signature brews, echoing the sustainability ethos from kitchen to glass.
