Chef de Cuisine Kevin Lau (刘坤进) has more than 25 years of experience under his belt, presenting a comprehensive menu which includes signature dishes like Champagne Pork Ribs,Salted Egg Sotong, Sauna Prawns, Crab in Gan Xiang style, Superior Stock Clam Bee Hoon, Pumpkin Bean Curd, and Superior Chicken Soup.

Champagne Pork Ribs ($12 / $18 / $24) reigns supreme at Diamond Kitchen. Chunks of pork ribs – the bones skilfully sliced away for convenient noshing – are marinated with Chef’s secret sauce overnight to fully impart the flavours and tenderise the meat. A key ingredient, champagne, adds a lively dimension to this signature dish.

Gan Xiang Fried Rice ($8 / $12 / $16) offers a burst of flavour that will have them coming back for more. Fragrant rice is cooked to perfection with the homemade sauce and egg before being topped with deep-fried chicken pieces.

Crab in Gan Xiang干香 style (market price). The intoxicating smoky aroma emanating from the freshly prepared dish is a prelude to the delectable spicy, sweet contrast between the sauce and sweet flesh of the crab.
