From now until the 30 June 2014, Red house Seafood will be introducing a host of new dishes, set lunch and two celebratory set dinners at its flagship Prinsep Street outlet. Lets check out some of the latest creations made from sustainable seafood which is flown in from Scotland.
Chilled Spicy Whelks (S$35), lightly tossed in sweet and spicy Thai dressing and topped with slivers of mango and onions that will whet your appetite.
Megrim fish ($100/kg), an uncommon flat fish from the turbot family that is texturally silky and delicate in taste. It is best enjoyed steamed with garlic, quality soy sauce and spring onions to allow its flavours to shine. Get your rice ready as the sauce is heavenly when paired with steaming white rice.
Scottish Brown Crab in White Pepper (S$58/kg) – This dish is fragrant and spicy with every bite of the firm flaky flesh. The textured flesh from this crustacean will make yearn for more.
Scottish Blue Lobster (S$148/kg) The Scottish Blue Lobster Coated with Sweet Mayonnaise – a deceptively simple yet scrumptious preparation! The sauce is tangy and complements the sweet fresh of the lobster.
Oyster ‘Yuan Yang’ Hor Fun ($20) that is boldly presented with deep- fried swirls of hor fun atop a bed of Scottish oysters and fragrant wok fried noodles in delicious gravy. The fried parts of the hor fun reminds me of crispy pork lard and it is a total delight to be eaten together with the thick and savoury sauce.
These five new dishes are available as a la carte orders or can be enjoyed in the Red House’s ‘Modern’ Anniversary Set Dinner that offers seven courses at $388++ for six persons.
