New Signature Menu By Chef Trevor Paulo – SOFITEL SO SINGAPORE


One of Singapore’s youngest hotel executive chefs, Chef Trevor brings a fresh and creative flair to Xperience Restaurant’s offerings, featuring a vibrant and tantalising selection of all-new dishes.

Guests can now discover sensational dishes and unexpected pairings of food and beverages, and be taken on an interactive culinary journey using the freshest produce of the season in a sophisticated combination of modern European flavours and Asian influences.

With Chef Trevor at the helm, Xperience ticks all the boxes for an entertaining and contemporary restaurant, with an open kitchen concept and a dining experience that invites guests to actively engage in the creative process. The new Xperience reflects Chef Trevor’s effervescent and playful personality, which is evident in the menu and its presentation – never a replica of another, but unique to each guest.

Chef Trevor has also hosted multiple Michelin Star chefs, such as Chef Hideaki Matsuo (3 Michelin Stars) Kashiwaya, Japan, and Chef Christophe Muller (3 Michelin Stars), L’Auberge du Pont de Collonges, to name a few. He has also worked with Chef Hendrik Yde (1 Michelin Star), Kiin Kiin, in Copenhagen, Denmark for Savour 2014.

Chef Trevor’s passion for French cuisine, fresh produce, experimenting and precision cooking techniques come through in Xperience Restaurant’s new Signature menu offerings. Using produce and flavours that complement each season – guests can expect a light and refreshing menu during spring and summer; warm and hearty flavours in autumn and winter.

As starters, the Spanner Crab and Poached Sweet Prawns will bring about savoury and sweet juxtaposed flavours to your palate. The Spanner Crab incorporates Japanese flavours and is served with Lime Mayonnaise, Spring Herbs & Flowers, Seaweed Crackers, Wasabi ‘Snow’, and Sansho.

For the main course, treat yourself to hearty meat dishes like the juicy Beef Short Rib or the flavourful Lamb Confit. Served with Ginger Carrot Puree, Kenya Beans, Asparagus, Heirloom Carrots and Vadouvan Jus, the mouth-watering Lamb Confit is great for those who truly enjoy juicy and succulent cuts of exceptional quality meats.

Desserts like the Textures of Meringue and Chocolate Dome are great for finishing a scrumptious meal on a sweet note. The Chocolate Dome, in particular, offers a spectacular display – your dessert is served with a dome that melts away gradually as Hot Vanilla Cremeux is slowly poured onto it, revealing the Hazelnut ice cream within.
