In collaboration with Garuda Indonesia, AquaMarine will be presenting a special Ramadhan Dinner Buffet from 16 May to 14 June 2018, complete with iconic Indonesian dishes by Guest Chef Vindex Tengker. Diners can also look forward to exquisite cultural performances on selected days and stand to win a trip to Bali and Belitung on Garuda Indonesia!
Having presided as a judge at many global events and cooking reality shows, Chef Vindex Tengker is now the Vice President of In-flight services for Garuda Indonesia. This Ramadhan, he will introduce authentic Indonesian cuisine at AquaMarine, featuring Rendang Padang, Gado Gado, Ayam Betutu, Sate Lilit and Nasi Goreng Kampung.
The halal-certified buffet spread will also showcase Kampung-style Slow Braised Leg of Lamb, a tender lamb gigot simmered for 16 hours, and subsequently roasted and served with peanut gravy, spicy coconut, crushed peanut and warm glutinous rice in banana leaf.
The Ayam Penyet – spring chicken that is deep-fried and ‘smashed’ at the live station, promises succulent chicken meat beneath the well-crisp crust. It is served with toufu goreng, tempeh goreng and chef’s own homemade roasted sambal bajak.
Another tantalizing highlight from the buffet is the Oven-baked Fish with Assam Curry. The fresh fish is marinated with dried assam spice and baked in banana leaves for the extra aroma.
Exclusively on Fridays and Saturdays, the Middle Eastern Roasted Whole Baby Lamb with Mint Yoghurt, Spicy Tomato Salsa and Chilli Dip takes centre stage. With whole baby lamb carefully prepared with more than 20 ingredients, including saffron, cumin and coriander seed, this dish is not to be missed.
The buffet spread is available at $72++ per adult and $36++ per child* for dinner from Sundays to Thursdays, and at $82++ per adult and $41++ per child* for dinner on Fridays, Saturdays and the eves of Public Holidays. *Child: 6-12 years old
In addition, every child aged 12 years and below dines for free with every paying adult, only from 17 to 30 May 2018.
