Mount Faber Leisure Group (MFLG) has welcomed celebrated Singaporean chef Robert Chan to its team as Executive Chef. With over 20 years of experience in the hospitality industry, Chan is set to revitalize the dining experiences at MFLG establishments, beginning with a revamped set menu for Dusk Restaurant & Bar.
Chef Chan, known for his European cooking style and ingredient-focused approach, will also introduce a new menu for Arbora Hilltop Garden & Bistro in the second quarter of 2023. He has earned various accolades throughout his career, including being named one of Singapore’s Top 20 Chefs in 2009 by UOB.
At Dusk Restaurant & Bar, diners can enjoy the new set menu ($78++ for three-course; $88++ for four-course) created by Chef Chan. The menu emphasizes the natural flavors of key ingredients in each dish, such as the Hokkaido Scallops with sea garden salad and mentaiko aioli. Guests can also enhance their dining experience with a selection of wines.
In addition to the set menu, patrons can try new tapas options crafted by Chef Chan, like the Jamón de Cebo de Campo 24 months ($24++) and Tête de Moine ($18++). Other à la carte choices include Albondigas ($16++) and Gambas al Ajillo ($30++).
