27 February 2013, Singapore – Easiest way to tell of a ramen shop/outlet is serves authentic Japanese ramen, stand outside and observe the customers going in. If 70-80% of the customers are Japanese, you can safely walk in and get your ramen fix. Please do not mistake Bari Uma for Uma Uma at Forum, as the latter did not impress me at all.
The latest ramen joint in town Bari Uma Ramen is from Hiroshima. Establish in 2002, the Singapore outlet (Tanglin Shopping Centre) is their first outside of Japan. This ramen-ya brought 3 chefs from Japan and you can be sure their tonkotsu (pork bone) broth is super rich. They call their broth “Saikyo Nokou” (最強濃厚 = Super Rich). On a rainy day, I found myself slurping every last drop of the ramen broth. Their signature Aji Tama Uma is definitely my favorite.
I’ve tasted most of the flavors and found the miso soup base a little too salty for my liking and the Kara Uma (spicy) is a tad too spicy and the ra-yu (chili oil) taste a little over powering.
Their menu also offer yakitori and other ala carte items which includes gyoza, salad and Ishiyaki (石焼 = cooked in a stone pot) items. The best thing about Bari Uma is not just there ramen, their Aburi Chashu is to die for. Thick chunky charshu grilled to perfection and the meat simply melts in your mouth (along with the fats of course). Please remember to order extra if you don’t like to share your charshu.
