Sea & Blue – A Brand New Continental And Korean Buffet At Marina Bay Sands

Launched in August 2017, Sea & Blue is a Continental and Korean buffet concept that presents one of Singapore’s most well-curated spreads outside a hotel setting.

This scrumptious premium buffet features the freshest seafood, succulent roasts and a myriad of Western highlights, Japanese fare, local favourites and a large range of mouth-watering Korean dishes and desserts. Multiple ‘live’ cooking and carving stations dot this huge space and hungry customers will love the open kitchen concept as they watch the skilled chefs preparing their food a la minute.

Mr B.K Kim, Representative Director for Sea & Blue says: “The dining experience at Sea & Blue is about three things – quality, freshness and hospitality. Singaporeans are well-heeled and always seek out quality over quantity – and that is what we offer at Sea & Blue. Our produce and seafood are sourced from around the world and diners can indulge in fare such as oysters from Canada, snow crab from Japan, beef from the Australia, and top grade Kurobuta pork loin from Australia. We keep the everything fresh by constantly topping up items in modest amounts so food is never left out too long and refreshed constantly. Our hospitable and friendly chefs and staff are on hand to explain what is available and help customers with their food requests. This is a great space for family gatherings, parties and is ideal for corporate dining as well.”

Prices at Sea & Blue are between $42++ to $64++ for adults during lunch, and $58++ to $68++ for dinner. Children dine at $22++ to $26++ at lunch and $26++ at dinner.

There are a total of TEN hot and cold stations at Sea & Blue – Korean, Barbecue, Deep-Fried, Hot Dishes & Noodles, Seafood, Salads + Fruit, Pizza & Pasta, Wine & Beer, Beverages, and Dessert Bar. Like Korean food? Everything, from the freshly griddled Pajeon (pancake) to the Guksu (hot noodles) is available. Or try your hand at building a Bimbimbap bowl and pick from a multitude of colourful toppings such as seasoned spinach, beansprouts, julienned carrots, seasoned Korean seaweed, and top it all off with a tasty gojuchang (red chilli pepper) paste. Aside from these, there are colourful crockpots filled with traditional Korean staples such as Soy Sauce Tteok-Bokki (rice cake), Dak- bokkeum-tang (spicy braised chicken) and Beef Bulgogi.

Fans of Korean barbecue take note; the collection here includes top-grade Pork Belly in either a spicy gojuchang (red chilli paste) marinade or unseasoned which allows the natural flavour of the meat to shine through. For those who love good old fashioned BBQ Chicken Wings, the sesame marinated pieces are grilled to perfection and laid out for the taking. Accoutrements such as fresh pineapple rings and sliced pumpkin are the perfect foil to the smoky meat when lightly flame-charred.

Seafood fans would have a ball of a time picking out Canadian Oysters to be shucked on the spot, Cold Prawns, chilled Scallops on the half shell, as well as Snowcrab legs on ice, to feast on; while fresh Salmon and Tuna Sashimi, Maki Rolls, Gimbap (Korean rice rolls) and Nigiri Sushi beckon from the adjacent counter.

It is hard to resist deep fried snacks and Sea & Blue does not make it any easier when the buffet includes tempting bites such as crispy fried Ebi Prawns, Chicken and Vegetable Gyozas, Tempura Soft Shell Crab, Karaage Chicken, Fried Squid Rings and more.

Thats not all, dont mis the roast area that cover both the Asian and Western hemisphere. For a more local flavour, dig into generous slivers of Suckling Pig, Roast Duck and Shao Rou (crispy pork). Nestled to the left of this line-up, a slab of Oven Roasted Ribeye Striploin beckons. This permanent item on the carving board comes with all the trimmings such as potato gratin, sweet potato fries, ratatouille, as well as two types of gravy – mushroom and black pepper. Other seasonal meats on the carving table can vary from Cajun Chicken, crispy Pork Knuckle, to succulent Wagyu Ribeye. Perfect for a meat lovers feast! Gleaming chafing trays in this area also include familiar favourites such as Salted Egg Prawns, Black Pepper Beef, and Bak Kut Teh.

One of the main attractions at Sea & Blue is a gorgeous brick pizza oven situated in the middle of the restaurant. There are three varieties of thin-crusted pizzas to choose from and includes familiar names such as Hawaiian Pizza, Four Cheese Pizza, and Grilled Vegetable Pizza. If pasta is the call of the day, guests are treated to items such as Spaghetti Bolognese and Squid Ink Pasta.

For the sweet-toothed diner, a trip to the dessert bar may be wise before starting on lunch or dinner proper just in case one needs to know how much space to save for cake! This whole area pays homage to all things decadent and is impossible to walk past without reaching for a dessert or two.

Besides numerous cakes, tarts, muffins, macarons, donuts, petit fours and pastries there are trays displaying an array of Gyeongdan (Korean rice cake) filled with red bean paste and Yakbab (Korean glutinous rice balls with honey and dried fruits). To add to these are three dessert treats that are definite heroes in this line-up – the D-I-Y Korean Bingsoo (shaved milk ice), fresh Waffles and a Milk Soft- Serve machine. Diners can customise their own Korean Bingsoo (shaved milk ice) by adding localised toppings such as grass jelly, maraschino cherries, red bean paste and much more. The kids will love the freshly made waffles as they can slather on helpings of maple syrup, chocolate sauce, chopped nuts and sprinkles to create a fun treat. The Milk Soft-Serve is perfect by itself or simply dress it up with the different toppings available.

The buffet includes free-flow drinks from the beverage counter and includes soft drinks, coffee and tea. Sea & Blue also carries both old and new world wines, Japanese sake and beer, as well as Korean soju and beer and prices start at $11 for a glass of wine and $20 for a bottle of soju.
Sea & Blue rotates its food offerings every fortnight so diners can look forward to a new experience with each visit.
